  2. I love this, my kind of food!!!! Gonna make this very soon. Well, just as soon as I get some good ginger beer. Wondering how that shortrib would taste sousvide for 72 hours at 57º C…been looking for an excuse…

    • im sure it would work perfectly sous vide for that long!! Def 3 days. just be careful when trimming, a lot of my ribs were pretty fatty, so especially if sous vide, a lot of the fat will remain. A fair amount of waste, but its better than biting into a delicious looking shortrib, that turns out to be all fat… :/ Also, when braising, you get the jus, which I then chill for a day, to remove all fat– then reduce by half. Then pick it up by mounting with a bit of brown sugar, then glazing the meat before serving. If sousvide, I suppose you could vacuum seal it with all the same ingredients, like compressing it? Def worth a shot ):

  6. You were among my favorites to win Master Chef. The dishes you produced were truly a visual treat. Its tough that ultimately only one person gets the title Good luck in all your future endeavors. I hope I get to buy your cook book some time in the future!
